Broccoli and cauliflower are both good sources of vitamin C and minerals but broccoli is particularly high in many nutrients. It contains high levels of vitamin A as well as folate and potassium. Broccoli is also rich in carotene, and high intakes may provide protection against cancer and heart disease.
There are many varieties of broccoli, but the most common is the calabrese with green, densely packed heads. Other varieties may be purple, lime-green and white. Hybrid varieties such as broccolini are also available. Drain well before serving as the florets hold lots of water.
