This has a mild buttery flavour, with smaller, looser heads than crisphead lettuces. Other varieties include: butter lettuce, with its soft, pale green leaves; mignonette, with curly, reddish-purple tinged dark green leaves; and the bibbs and boston, popular in the United States.
