A mixture of spices used in chutneys, pickles and vinegar. The quantities and number of ingredients vary depending on personal taste and the recipe but usually consist of allspice, bay leaves, cardamom, chilli, cinnamon, cloves, coriander, mustard seeds and peppercorns. The spices are tied into a muslin bag which can be lifted out at the end of cooking.
