Also called lady fingers, savoiardi or savoy biscuits, these are finger-like strips of sponge cake made by piping the mixture into thin lines about 10 cm (4 inches) long, then sprinkling them with sugar. The cooked biscuits are light and crisp and used to accompany desserts such as mousses, fruit desserts and ice creams, as a border for cold charlottes or as a base for trifles and tiramisu. They can also be bought readymade from supermarkets.
