Using a Sponge to Make Bread Dough

  1. The ready-to-use sponge.

  2. Combine the flour and salt with the sponge (shown here, mixed on work surface).

  3. Knead the dough until there is no loose flour.

  4. Pile the dough in a mound, cover with plastic wrap, and let rest.

  5. Knead the dough until it pulls away from the work surface.

  6. Cover dough and let rise until doubled.

  7. Punch down risen dough and shape into pullman loaf.
