- The ready-to-use sponge.

- Combine the flour and salt with the sponge (shown here, mixed on work surface).

- Knead the dough until there is no loose flour.

- Pile the dough in a mound, cover with plastic wrap, and let rest.

- Knead the dough until it pulls away from the work surface.

- Cover dough and let rise until doubled.

- Punch down risen dough and shape into pullman loaf.
