The best way to slice peeled mango is to remove the flesh from the stone in neat slices. The fruit should be just ripe. Soft fruit is difficult to hold, resulting in untidy slices.

Peeling Peel the fruit using a knife. Work lengthways along the fruit, keeping the shape.

Slicing Hold the fruit firmly, starting with the flat ‘face’ of the flesh in the palm of your hand. Cut off long, slim wedge-shaped slices. You should achieve a number of neat slices from the flat of the stone and a few misshapen slices from the narrow sides of the stone.
