I just couldn’t live without the beautiful Bonnet! This is one of the most characteristic ingredients in Caribbean food. You can use other hot chillies but, for me, the Scotch Bonnet has such a beautiful fragrance and fruity flavour as well as heat. And they are hot, hot, hot! But each chilli varies, so try a little bit first to see. Leave out the seeds and the inner white ribs if you want to tame the flames. Scotch Bonnet chillies come in many different colours: they can be red, yellow, orange, green and even brown.
