tarator a term with two meanings, depending on where it is met.

In bulgaria (and in slightly altered form in neighbouring countries) it refers to a refreshing cold soup of yoghurt, cucumber, walnuts, garlic, etc. This is not far distant from the Greek cucumber and yoghurt salad called tsatsiki.

In turkey and the Middle East tarator is the name of a sauce which is made with tahini (sesame paste), lemon juice, and garlic. This has many uses. Grilled or baked fish served with tarator sauce is a common, and often a festive, dish in egypt, and also in lebanon and Syria.
