Pull the leg away from body. With a sharp knife, cut through the skin joining the leg to the body, pull the leg away further and cut through more skin to free the leg. Bend the leg outwards and back forcing the bone to come out of its socket close to the body. Cut through the flesh between the end of the thigh bone and the carcass to remove the leg. Split the carcass along the breastbone, cut through the ribs on each side to take away the fleshy portion of the breast.
