The portobello is the steak of the vegetable kingdom: It looks like a steak, it fills a plate (or a bun) like a steak, and there’s even something meaty about its flavor, especially when the mushroom is grilled. If ever there was a mushroom for grilling, it’s the portobello. Its broad cap rests securely on the grate and the gills readily absorb the smoke flavor. Portobellos contain less water than most mushrooms, so they can stand up to the heat of the grill. Their impressive size makes them easy to stud with garlic and other flavorings.
