Grilled fruit is a great way to bring a barbecue to a festive close. In markets throughout Thailand or Indonesia you’ll find grill jockeys dipping fruits like bananas in coconut milk and palm sugar and searing them over hibachis. From bananas it’s a short leap to another tropical fruit that tastes great grilled this way: pineapple. Indeed, any juicy fruit is a candidate.

Setting Up the Grill

  1. To set up a charcoal grill for direct grilling, first light the charcoal in a chimney starter.

  2. Using a garden hoe or other long-handled implement, rake the burning coals into an even layer.

  3. To see if the grill is preheated to high, use the test.
