In Chinese dishes, the flat-pod snow pea with immature peas has long been popular for its crisp crunch and bright grass-green color. Plump sugar-snap peas, with their thick juicy pods and fully developed peas, offer a sweeter, more succulent alternative. Remove the strings and briefly blanch or Stir-fry. Store loosely covered in the refrigerator.
