Buying Look for firm, plump tomatoes that yield to gentle pressure. Vine-ripened tomatoes, available during the summer months, will have the best flavor. Choose from an array of colorful heirloom tomatoes when available at the market.
Storing Let ripen at room temperature; do not refrigerate.
Quick tip Have a good supply of low-sodium, all-natural canned tomatoes on hand for adding to pastas and soups when tomatoes are out of season.
Using Slice or chop and eat raw in salads, sandwiches, and salsas; add to soups, pastas, and sauces.
