Baby bok choy is a vegetable that comes in small bundles of about seven light greenish white stalks with deep green leaves. It has a celery-like crunch and mild cabbage like flavor. More tender than the larger variety, they can be used whole or halved and need only a brief cooking. Braise them or use in stir-fries or soups. Very young baby bok choy can be eaten raw.
