Also known as “forbidden rice,” this short-grain rice, pictured in the middle (left) in the photograph, has a nutty flavor. When soaked the water turns a deep purple. This rice is often combined with other rice such as white and brown rice. The soaking liquid is used for cooking the rice and turns the dish a pretty rosy hue.
