Yooja in Korean or yuzu in Japanese is a small hard round Asian citrus loaded with tiny pits. It is prized for its rind, as much as its juice. The rind is used to add an aromatic element to both savory and sweet dishes. Yooja honey has strips of rind suspended in a thick honey and sugar mixture and is sold in large glass jars. A spoonful is dropped into boiling water to make a soothing tea.
