These Korean chili flakes are made from long thin red peppers that are dried and then processed into a variety of textures. The coarse texture is used as a garnish, spice and to make a variety of pastes, sauces and dressings. You can find Korean coarse red chili pepper flakes at Asian or Korean markets and online. Sometimes the pepper flakes may be referred to as a “powder” on the packaging, but you’ll be able to recognize the flakes by their coarse texture, which is similar in appearance to Italian red pepper flakes. This ingredient is one of the “must-haves” that cannot be substituted with another type of red pepper.
