Dates are a dried fruit with a dense, sticky texture and a sweet, almost caramel, flavor. Korean dates, known as “jujubes,” are small and reddish and not as sweet as the Middle Eastern and North African varieties. They are only available in Asian markets. We have substituted the more widely available Medjool date.
