Dried Korean vermicelli are grayish noodles made from sweet potato starch. They are sold in bunches in packages almost 24 inches (61 cm) long. When set in boiling water they become translucent and are sometimes called β€œglass” or cellophane noodles. They are used in the Korean noodle dish called Japchae.
