A toothed mushroom, the gnarled hedgehog has tiny white spines on its underside instead of gills. According to one mycologist, it resembles a drunken gnome with a floppy hat! Mild and sweet, but also very dry and brittle, hedgehog mushrooms can be cooked like common mushrooms and are good broiled with olive oil, sautéed or stewed with cream and herbs, or aromatic spices. Also good with broccoli, cauliflower, zucchini, carrots, onions.
