You can cook with eating or cooking apples, depending on whether you are after a sweet or sharper taste. Try to buy pears in season as this is when they are at their best for recipes such as the Pear and cinnamon tart. Don’t leave peeled, cut apples or pears sitting around as they quickly go brown. Add to whatever mixture you are cooking them in straight away. If you buy plums in a punnet some never seem to ripen. Use them up in the Plum and poppy seed upside-down cake.
