Oil-free doesn’t have to mean fat-free. For example, when cooking oil-free, we ditch coconut oil and use coconut milk (you can also use coconut butter or manna). We nix sesame oil but use tahini (sesame paste). Olive oil is off the list, but olives are A-OK. Nuts, avocados, and seeds are delicious and packed with healthy fats, and we think they’re even more flavorful than oils.
