Unless noted, use salt and pepper to taste in most dishes, usually waiting until the end to add salt to a dish so as to limit its use. We primarily use freshly ground black pepper and fine Celtic sea salt. For “finishing” a dish, you can choose a high-quality coarse or flaky salt, such as Maldon.
