Tempeh is a fermented, minimally processed legume product that you can find in most grocery stores these days. Though it’s usually made from soy, it can also be made from any combination of legumes and grains. The beneficial bacteria in tempeh break down the legumes so they are more easily digested. We’re lucky to have Smiling Hara Tempeh here in Asheville, so that’s what we use. Their tempeh (including some 100 percent soy-free varieties made from black beans or other legumes) is available across the Southeast and online. If you can’t find Smiling Hara or one of the other artisan tempehs across the United States, choose organic tempeh to ensure that the soybeans are non-GMO.
