Strawberries, raspberries, blackberries, and blueberries are all late spring and summer fruits, although they are available year-round in modern supermarkets. (Given the quality of strawberries imported long distances in the winter, I’m not sure I can call this progress.) All berries are soft and perishable and should be handled gently and used quickly—ideally the same day you buy them. Look for firm berries with a bright color. Wash berries only right before using them, and rinse them quickly; do not soak berries or they will become waterlogged. (I never wash raspberries.) Store berries at room temperature, uncovered, if you will be using them the same day. If not, refrigerate, covered, and use them as soon as possible.
