  • About
Pies and tarts are the mainstays of the baking repertoire, yet so many people are afflicted with fear of pastry and fear of rolling that they’re either unwilling to try baking pies or, worse, they resort to prepared refrigerated crusts from the supermarket. Making pastry dough and rolling it out are both easy tasks, as you’ll see in the instructions that follow. There are also several options for doughs that are pressed into the pan instead of being rolled out, which are simple alternatives if you’re trying pie or tart baking for the first time.
