See the list of ingredients in each pasta recipe to find out the quantity of flour, salt, olive oil and eggs needed to make the pasta dough for each dish. Fresh pasta should be used on the same day it is made.
Place the flour, salt, olive oil and eggs or egg yolks in a food processor and mix in short bursts until the mixture forms large crumbs.
Gently press the mixture between your finger and thumb to check if it will come together smoothly. If not, continue to process for a few bursts.
Turn out onto a lightly floured surface and knead for 2 minutes into a smooth dough. Wrap in plastic wrap and refrigerate for 20 minutes. Secure a pasta machine to the edge of a table.
