Rolled oats are technically processed but minimally—the oat groats are dehulled, steamed, and rolled. They show up a lot in my baked goods, breakfast recipes, and bean burgers. Most oats are not gluten-free, because they’re processed in the same factories as wheat but there are certain manufacturers that produce specifically gluten-free brands (for resources). If avoiding gluten is essential for you, ensure you have certified gluten-free oats. I use old-fashioned, gluten-free rolled oats in all my recipes (not quick-cooking oats).
