More often than not, quince syrup (or cordial) is the by-product of poaching quince in a sweet syrup. Instead of pouring the syrup down the drain, it can be bottled and stored in refrigeration for upwards of 6 months (or really as long as it still tastes good to you). Use the recipe for the sweet poached quince or simply combine 4 cups [960 ml] of water, ΒΎ cup [180 ml] of honey (or 50:50 honey to maple syrup), and a pinch of salt and poach whatever volume of quince you have on hand. Use the poached quince elsewhere and save this gloriously pink syrup.
