Japanese ramen can be pepped up at the table with an interesting range of seasonings. These typically include:
Shichimi togarashi– a spice blend often made from seven ingredients, usually chilli powder, dried orange peel, black and white sesame seeds, nori, hemp seeds, sansho (Sichuan) pepper, and ground ginger.
Nanami togarashi – a Japanese chilli powder that packs a real punch.
Sansho or sansyo pepper is the Japanese version of the Sichuan peppercorns from China.
