Palm oil one of the few saturated vegetable fats in nature, palm oil is derived from the fruit of the oil palm. It is identifiable by its reddish colour and semi-solid texture at room temperature. It is this style of palm oil that is used extensively in West African cooking for its colour and flavour rather than the heavily processed version used in processed foods.
