A thermometer is a useful kitchen tool to check that food has reached the correct temperature. They are used mostly for meat (meat or instant-read thermometer) to ensure that it is properly cooked, to check on its progress in the oven, or to avoid overcooking; for sugar (candy thermometer) to measure the temperature of a sugar solution and identify the stage of cooking reached; and for fat, which is helpful for deep frying. Candy and fat thermometers are able to read very high temperatures (up to 400°F/200°C).
