Also known as borlotti, and a close cousin of the kidney bean, cranberries get their name from the maroon streaks on their exterior. Their mild, nutty flavor makes them a good choice for a wide variety of soups and stews, but they are equally delicious simply boiled and seasoned with olive oil, herbs, and garlic.
