Most soup recipes use onions in combination with other vegetables. Usually the onions are cooked in olive oil or butter for about 10 minutes, until they turn shiny and translucent. This releases their flavor and softens them before any liquid is added. Once the liquid is added, relatively little cooking is needed to extract the onions’ flavor.
