Similar to muscovado, demerara is another caramel-colored raw sugar with a medium grain and a mild hint of molasses. This crystal sugar can be used as a table sugar, and is a frequent choice for rolling gingersnap and other cookie doughs in, decorating baked cookies, and sprinkling over the tops of bread pudding and custards. It is available in well-stocked grocery stores, whole-food and health-food stores.
