Fruit Purées

Commercial fruit purées are available and usually have 10 per cent sugar content to help in preservation. I prefer to make my own wherever possible for immediate use. Prepare the desired fruit as normal, then purée the flesh in a blender on high speed until a thick, smooth purée is obtained. Some fruit purées will then need to be passed through a sieve to extract seeds and pulp. These purées can be used immediately, stored in the fridge for up to 3 days or stored in the freezer for longer periods.
