In China, people eat noodles of all kinds, day and night, in restaurants and at food stalls. They provide a nutritious, quick, light snack and usually are of good quality. Several styles of Chinese noodle dishes have now made their way to the West, including the fresh thin egg noodles which are browned (cooked) on both sides and the popular thin rice noodles. Both kinds can be bought in Chinese markets fresh and dried. Below is a list of the major types of noodles.
