The Chinese prefer to cook with peanut oil because it has a pleasant, mild, and unobtrusive taste. It can be heated to a high temperature without burning and this makes it perfect for both stir-frying and deep-frying. The peanut oils found in China are cold pressed and have the fragrance of freshly roasted peanuts. Some Chinese supermarkets stock a number of Chinese brands, their names appearing in Chinese characters on the labels. These are well worth searching for, but if you cannot find them, use a good quality peanut oil from your local supermarket.
