For a prettier final dish, white or yellow onion is generally used because of its neutral color. If you don’t mind bits of onion showing through, use red if that’s what you have on hand; it won’t make much difference in terms of the taste. Even though the onion isn’t cooked down quite as much as it is in kay wot, it’s still best if it’s minced quite finely. If you use a food processor, remember to decrease the amount the recipe calls for by a smidge, as the amounts called for in each recipe are based on hand-minced onion: 1 medium onion, minced by hand = 2 cups; 1 medium onion, machine processed = 1½ cup.
