Commonly known as moong dhal or mung dhal in India, split mung beans are relatives of the lentil – they are actually mung beans with the outer skin removed. Although the whole beans are small, round and green, once the husks have been removed the tiny inner beans are yellow in colour. Split mung beans cook very quickly and become soft. They have a mild flavour and can be cooked with rice or used in soups, stews and curries.
