In Spanish cuisine the word salsa means sauce, but in America it has come to mean any fresh, chunky condiment. More often than not a salsa begins with tomatoes, with peppers or tomatillos added. We make salsas with a variety of vegetables, or sometimes with fruits, or even with a combination of fruits and vegetables. Salsas are the freshest way around to top grilled food.
