Trim any excess fat from steaks, chops, and roasts, wrap the meat in freezer-weight plastic wrap or put it into a resealable plastic freezer bag, and freeze. Ground (minced) beef freezes best if divided into small portions. Discard any beef that develops an โ€œoffโ€ smell.
