Introduction

I never, ever thought I’d actually write a book. I’m a huge fan of recipe books and own far more than I’d like to admit to, so the thought of having one of our own was just plain silly. In fact, it was a running joke in the bakery; every time we came up with a new recipe we loved we’d say, ‘this one will go in the book’. The truth is, even now, the team and I still can’t quite believe we get to bake for a living, let alone write a book about it.
