Cabbage belongs to a huge family of vegetables that includes broccoli, cauliflower, mustard, and kale, all of which have fairly strong flavors. When it comes to cabbage itself, the head cabbages and the leafy kind, like bok choy and Napa, are pretty much interchangeable. Red cabbage is often the odd man out, not so much because of it’s flavor (it’s hard to tell the difference between the taste of red and that of ordinary green) but because it’s color tends to overwhelm that of any other ingredient.
