Leeks

The most expensive member of the onion family (they take the longest to grow), leeks are also the best as a stand-alone vegetable. Cleaning them, if you want to serve them intact, is tricky. If you chop them, you can simply wash them as you would a green. Nothing else about them presents any challenge.
