June is the month when I’ll start to have an abundance of herbs and salad leaves in the garden, weather permitting of course. I pick these as I need them, tossing them into all kinds of summery dishes to add variety, but there are plenty more seasonal treats to look out for now. Elderflowers, for example, are in blossom. It’s well worth harvesting these to make a concentrated syrup or cordial, which can be stored for use later in the year. The great thing with elderflower syrup is that you can make it as concentrated as you like and use it for jellies and all kinds of creamy puddings, or simply as a refreshing summer drink - with or without alcohol.
