Around the time we opened Brother Juniper’s Bakery in Santa Rosa, there was a local muffin company headed by two women who spent some time developing new foods for Del Monte Corporation. While at Del Monte, they did a little market research and discovered that muffins were going to be the next big bakery trend, so they began a long-range plan to create a national muffin franchise business. They eventually opened a second shop so, who knows, they may be well on their way to their goal, which does not seem all that unreachable to me. More importantly, they got me thinking about muffins.
