In Switzerland, Birchermuesli was developed by Dr Max Bircher-Benner almost a hundred years ago, inspired by his visit to a mountain shepherd whose healthy way of life had greatly impressed him when he thought of the illnesses of his town patients. It was a mountain diet consisting of soaked oatmeal, dried fruit and nuts. Bircher-Benner, regarded as a complete crank by his contemporaries in the medical profession for suggesting that a simple change of diet could improve health, nevertheless continued feeding the mixture (muesli) to his clinic patients with such regularity that it became known as ‘The Dish’.
