By 2013 I was working as chef de cuisine at Sandy Lane in Barbados. Barbados felt like an unspoilt island, kind of untouched. A lot of the houses are low-sitting, so as not to obstruct the beautiful views of the coast. There are always sheep and goats tied up in gardens, nothing is polished or new-feeling; it has an authenticity to it, it’s paradise but also people live and work there, which I always found enchanting.

Sandy Lane was a different planet: it’s one of the most luxurious hotels in the world and also one of the most professional. They gave us a beautiful house right near the beach with its own garden, a marble staircase, and an extra bedroom for people to come and stay. It was like living a millionaire’s lifestyle, particularly because Krystal and I don’t come from money.
