Over time, I got better at being a chef and restaurant owner. I made all the mistakes and was lucky to have certain staff join me: Jade, Matt, Mark, Ash and Lewis were and are all heroes who have carried us to where we are now.

I’m not saying I’m not lucky, but I feel like being a bit naïve has actually helped me achieve things that I otherwise wouldn’t have attempted. I think you can overthink things, see the potential obstacles and talk yourself out of trying. I always knew I could make the restaurants work: at every obstacle I just pretended that I knew it would be fine. You have to be a little tunnel visioned.
